Introduction
The idea behind this dish is to transport Brescia’s famous spit roast, the spiedo bresciano, to a place with strong links to Lido84, namely Lake Garda. The end result is a sardine that has been “crisped”, precisely with the intention of emulating a Brescian spit roast.
