Il Fagiano Restaurant is the place to eat within the historic building of the Grand Hotel Fasano & Villa Principe (dating to 1888) and is headed up by chef Maurizio Bufi. The dishes take you on a journey across the peninsula, including eastwards.
As you peruse the tasting and à la carte menus, you can draw on the wisdom of head waiter and sommelier Nicola Filippello. Having worked here for nine years, he is able to offer a large selection of wines made in Italian micro-wineries.
