Lo spiedo di Vivace
Introduction
Vivace’s interpretation of Brescia’s spit roast, a famous traditional recipe. The whole cut of meat is cooked in a vacuum-sealed bag, thus preserving its flavour and juices. It is then cut up and cooked over a charcoal grill.
