Introduction

Bagòss cheese is a typical product of Bagolino, a small mountain village in the Alps of northern Brescia, in Val di Caffaro. Recognized by Slow Food since 1999, it is produced only here. In this recipe we find it added to a tasty risotto, with its richness tempered by the addition of asparagus.
